Candied nuts are addictively delicious, and this simple recipe adds cinnamon and a kick of spice to make a healthy, irresistible snack that’s great at any time of day.

Ingredients

  • 2 c. walnut halves
  • 1 egg white
  • ¼ c. granulated sugar
  • 1 Tbsp. vanilla extract
  • 1 ½ teaspoons Ceylon cinnamon
  • ¼ teaspoon fine sea salt
  • 1/8 teaspoon cayenne pepper

Preheat the oven to 250 degrees and grease a cookie sheet. In a small bowl mix the sugar, cinnamon, salt, and cayenne pepper. Set it aside.

In another bowl, beat the egg white and vanilla extract until foamy (but not stiff.) Add the walnuts and toss until coated. Add the spice mixture, and stir, making sure that each walnut gets a coating of spice.

Spread the nuts in an even layer on the cookie sheet and bake for one hour. Allow to cool slightly, then break the nuts apart and store them in an airtight jar. They’ll keep for up to two weeks.
